Cucumber Salad Boats

This recipe provides an interesting twist on presenting a salad.

Ingredients

3 large cucumbers

1 (170g) can of tuna in water, drained well

2 hard boiled eggs, chopped

1/2 cup of celery, chopped fine

1 tablespoon of sweet onion, chopped fine

1/4 cup of mayonnaise

2 tablespoons of relish

1 teaspoon of lemon juice

1/4 teaspoon pepper

1/2 cup of cheddar cheese, shredded

Directions

Cut the cucumbers in half longwise.

Scoop out the seeds and cut the bottoms of the cucumber halves so they sit flat.

Place the tuna, eggs, celery and onion into a large mixing bowl.

Stir slightly to help break up the tuna.

Add the mayonnaise and relish.

Stir together until the mayonnaise is slightly smooth.

Pour in the lemon juice.

Sprinkle in the pepper.

Stir to mix well.

Sprinkle in the cheese and continue stirring until all the ingredients are incorporated together.

Fill each cucumber half with the tuna mixture.

Serve as desired.

Cucumber boats can be filled with any type of salad. Egg salad, chicken salad or even ham salad make a great addition to any party.
